GOZU is focused on the versatility, intricacies and nuance of the wagyu breed through the craft of robata and utilization of the animal in its entirety. The GOZU experience is comprised of Japanese and local sea life, wild foods and wagyu.

Owner | Executive Chef. Marc served as executive chef at Alexander's Steakhouse, where he opened locations in San Francisco, Taipei and Tokyo and leveraged relationships in Japan to create one of the best Wagyu programs in the country. GOZU is the next iteration in the journey to explore the flavor and nuance of Japanese beef and the first restaurant in the MZ Dining Group.
Benjamin Jorgensen
Co-Owner | Co-Partner. Ben is a serial tech entrepreneur, operator, and investor. His accolades include a notable exit in 2015, investing in more than 15 companies (including the Three Michelin Starred Single Thread Inn and Restaurant), and running an emerging tech company.
Peggy Tan
Chef de Cuisine. It was during a trip overseas while she was a student at CIA in Singapore that Peggy Tan found her calling. “My mind was blown learning about seasonality and meeting people who were passionate about a farm to table philosophy”, she explains, and which remains the most important and meaningful part of her work. In 2018 Tan was part of a small team of five who assisted Michelin-starred Chef Claude Le Tohic open his French restaurant ONE65 in downtown San Francisco. In 2020 Peggy returned to Singapore and worked as Senior Sous Chef under legendary Three Michelin-starred Chef Anne-Sophie Pic’s La Dame de Pic. It wasn’t long before she was enticed to return back to California—and once again work for Chef Marc Zimmerman at Gozu. Peggy was drawn to his whole animal philosophy, along with fermentation and experimental techniques that became the hallmark of the restaurant. “Learning how to use the brisket, the neck and render trimmings for broth is a new point of view for me, I am very impressed with Chef Marc’s vision.”
